Wahoo! I have to admit, I love the name of this fish. I also love how it tastes.
Wahoo is not exactly the cheapest fish in the seafood market, nor is it one that’s always readily available. There are two reasons for this that I’m aware of:
1) Wahoo is in high demand from seafood connoisseurs who prize it for its delicate, white, high-quality flesh.
2) Wahoo is a real loner among fish. It rarely schools with others of its kind, so fisherman are lucky to ever find more than one or two in any given haul. Solitary individuals are generally taken as a “bycatch” with tuna and other large species.
As a side note, wahoo is a very fast running fish–some say the fastest fish in the world. A few people have claimed that its name comes from the shout of “Wahoo!” by those fishermen who manage to hook one. (Others say, though, that it comes from the name of Oahu, one of the Hawaiian islands.)
Wahoo can reach up to 6 feet in length, and weigh up to 100 pounds, so a single fish–if and when someone is lucky to find and catch one–can provide a good deal of meat.
You can bake or grill wahoo and it will make a fine meal either way.
Baked Wahoo
Ingredients
3 lbs. of wahoo
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon lime juice
1/2 cup pickle relish
2 tablespoons chopped chives
Directions
Mix mayonnaise, lemon and lime juice, pickle relish, and chives. Coat the fish all over with this mixture. Wrap fish in aluminum foil. Bake for 1/2 hour in oven preheated to 350 degrees F. If fish does not appear to be thoroughly cooked after 1/2 hour, bake for another 10 minutes.
Simple Grilled Wahoo
Ingredients
4 wahoo steaks
1 tablespoon olive oil
1/2 tablespoon lime juice
1 tablespoon lemon juice
1 tablespoon paprika
1 teaspoon crushed red pepper
Directions
Whisk together olive oil, lime and lemon juice, paprika, and red pepper in a small bowl. Place wahoo in a dish. Pour the marinade mix over the fish, place in refrigerator, and let stand for half an hour. Remove wahoo steaks from fridge, remove from pan, and grill directly over charcoal for 15 minutes, turning once during that time. You can use the leftover marinade mix to baste the fish while it is grilling.

How Body pH Can Affect Your Energy Levels
WHAT MOST PEOPLE DON’T REALIZE; WE ARE BIO ELECTRICAL ENGINES
In order to accomplish all the many millions of complex functions that occur over the course of the day, your body has to be able to communicate with itself… all the way down to the cellular level. And do you know how it does this? Through pulses of electricity. That’s right, electricity.
Your body operates on an electro magnetic current. Believe it or not, all of the organs in your body emit these fields of electrical current. In fact, nerve signals are nothing more than electrical charges.
What creates this electrical power in your body is a very fine balance that exists in your bio chemistry. And of all the systems in your body that depend on this delicate, bio chemical balance, one of the most important is your blood stream. This is where pH comes into play. But what is pH?
WHAT PH IS AND WHY IT IS IMPORTANT TO ALL YOUR BODY FUNCTIONS
PH is a scale that measures how acidic or alkaline a substance is. The scale ranges from 1 to 14 with 1 being very acid, 7 neutral and 14 very alkaline.
So what does pH have to do with you and your blood? Well, the pH of your blood is extremely important. The ideal pH level for your blood is right around 7.35 and your body goes to enormous lengths to maintain this level.
Why? Because if your blood pH were to vary 1 or 2 points in either direction, it would change the electrical chemistry in your body, there would be no electrical power and in short order you would drop dead. As you can see, maintaining the right pH level in your blood is pretty important!!
With this in mind a good way to avoid upsetting this delicate bio chemical balance would be to take a look at those things that can compromise the maintenance of the ideal pH level in your body. And what is the main culprit in this case? The answer is the creation of acid in your body.
Before we look at what causes acid, here’s a graphic example to give you an idea of what can happen in the blood when your pH drops to less than ideal. Red blood cells are how oxygen is transported to all the cells in your body.
As red blood cells move into the tiny, little, capillaries, the space they have to move through gets pretty small. In fact, the diameter of the capillaries gets so small that the red blood cells sometimes have to pass through these capillaries one red blood cell at a time!
Because of this, and because it’s important for the red blood cells to be able to flow easily and quickly through your body, they have a mechanism that allows them to remain separate from each other. This mechanism comes in the form of the outside of healthy red blood cells having a negative charge. This causes them to stay apart from each other, sort of like when you try to push the negative ends of two magnets together. They resist each other and stay apart.
Unfortunately, acid interferes with this very important mechanism in a pretty frightening way. Acid actually strips away the negative charge from red blood cells. The result is that your red blood cells then tend to clump together and not flow as easily. This makes it much more difficult for them to flow easily through the bloodstream.
But it also makes it harder for them to move freely through those small capillaries. This means less oxygen gets to your cells. Acid also weakens the red blood cells and they begin to die. And guess what they release into your system when they die? More acid.
I could describe a whole list of processes that occur when your system becomes and remains acid but I think you get the idea. The point is that aside from the acid that is secreted into your stomach to aid digestion, acid in your body is bad. Really bad.
In regard to producing energy in the body, here’s an easy question for you. What do you think happens to a person’s energy level if over time their system becomes more and more acid, their biochemical balance is disrupted and their red blood cells can’t deliver oxygen and nutrients as efficiently to all their cells? The answer is simple. Their energy level drops. Dramatically.
Are you beginning to get the picture here as to the importance of pH in your body? Good. Now let’s take a quick look at what causes acidity in your body and then look at steps you can take to get your body pH back to an ideal level.
WHAT CAUSES ACID IN THE BODY
The primary cause of an acidic condition in your body is from what you put in your mouth. In other words, what you eat and what you drink. And it isn’t how “acid” something may seem when you eat or drink it. It has to do with what is left over when you digest it.
Specifically, does eating or drinking something leave behind an acid or alkaline “ash”. For example, I don’t know about you but I love seafood. Scallops are one of my favorites. However, when your body digests scallops, it leaves an extremely acid ash. In fact, scallops are one of the most acid foods you can eat.
Unfortunately, a lot of the things most people put in their mouths create an acid ash. These include alcohol, coffee and a lot of flesh protein in your diet. Interestingly enough, stress also tends to create an acid condition in the body.
STEPS YOU CAN IMMEDIATELY TAKE TO IMPROVE YOUR PH
Fortunately, it is pretty easy to immediately change your pH for the better and make it more alkaline. The first step is to understand which of the foods you are eating and the drinks you are drinking are acid and which are alkaline. Then it’s simply a matter of eliminating some of the more acid foods you are eating and adding in more alkaline foods.
However, before you start, it’s important to get a baseline of what the pH is in your body so that you can see how you are improving or if you need to continue to eliminate more acid foods and add in more alkaline ones.
You can do this by testing the pH of your saliva on a regular basis. This is really simple to do. More details on how to do this are provided on some web pages I have created for you to help you out. A link to these pages is provided below.
In addition to decreasing the amount of acid foods you eat and increasing the amount of alkaline foods you eat, one of the best ways to immediately begin changing your pH is to drink “green drinks”. You can make these by simply adding a powder that is made up of a whole host of vegetables that are highly alkaline to a glass of water. Information on suggested green drink powders to use is included on pages that I have a link to below.

The Best Chicken Stew Recipes
1. Chicken Stew with Vegetables – This is chicken stew with turnip, peas, carrots, potatoes, corn and seasonings as well as other vegetables.
Ingredients:
2 tbsp vegetable oil
1 roasted chicken (4 up to 5 pounds, cut)
1 ½ c water
2 tsp salt
½ cup broth or sherry
½ tsp pepper
1 c frozen or fresh green peas
8 up to 10 white onions (small, halved)
1 c sliced carrots
1 c diced potatoes
½ c diced rutabaga or turnip
½ c frozen or fresh corn
1/3 c flour blended with ½ c cool water (so as to form a type of paste)
Procedure:
o Using a heavy pot or a Dutch oven, heat some oil.
o Add some chicken pieces. Make sure all sides become brown.
o Add some sherry, water, pepper and salt.
o Cover and allow simmering for 45 minutes.
o Add some peas, onions, turnip, carrots, corn and potatoes.
o Cover and allow simmering for 35 up to 45 minutes again.
o Stir in some flour as well as water mixture.
o Continue to cook until the stew becomes thick, which will still take 10 minutes.
You can serve this with rice also. Thus, this is good for 6 servings.
2. Chicken and Sausage Stew – You can serve this chicken stew either with biscuits or cornbread. This is best as a family hearty meal.
Ingredients:
1 tbsp butter
1 chicken (4 lbs, cut)
1 tbsp olive oil
1 large yellow or sweet onion (chopped coarsely)
2 celery ribs (sliced)
2 garlic cloves (minced)
Pinch thyme
1/8 tsp black pepper
½ tsp Cajun seasoning
6 c chicken broth
3-4 medium potatoes (peeled and cut into cubes)
2 carrots (sliced)
1 c pearl onions (used canned or frozen, peeled, drained)
8-12 oz smoked sausage or chicken sausage
2 tbsp butter
Pepper and salt (for taste)
¼ cup flour
Procedure:
o Wash the chicken and cut it up.
o Pat it dry and remove excess fat.
o Heat 1 tbsp butter as well as olive oil using a large Dutch oven or stockpot.
o Add onion, celery and chicken. Make sure you make the chicken brown on each side.
o Add thyme, broth, black pepper and Cajun seasoning.
o Bring the mixture to a boil.
o Have the heat reduced to medium then low.
o Cover and allow simmering for 45 minutes.
o Remove the chicken pieces and allow cooling slightly.
o Skim all other visible fat apart from the actual broth.
o Add potatoes, onions and carrots onto the broth.
o Cover and allow simmering again.
o In a small sized saucepan, heat about 2 tbsp of butter on medium to low heat.
o Sauté smoked sausages until it is brown.
o Stir in approximately ¼ cup of flour until it has mixed well with the fat.
o Add sausage mixture to the still simmering stew.
o Remove the chicken from the actual bones; chip it add onto the stew.
o Bring the chicken stew to simmer again; cover and then, continue to cook until all the vegetables are tender and the stew has thickened.
o Add pepper and salt, for the taste.
This can yield 6 up to 8 servings.

What You’ll Need:
4 large boiled eggs, chopped
7 ounces of field greens
1 avocado, halved, pitted, and sliced thinly
2/3 cup of cherry tomatoes, halved

¼ cup of extra virgin olive oil
1 cup of Parmesan cheese, grated

Cooking Swordfish Mexican Style

If you assumed that beef, chicken and pork were the main protein staples in a Mexican diet, then that is true about certain regions and seafood is not eaten much inland. However, wherever there are lakes, rivers, or the ocean, Mexicans greatly enjoy making recipes with the abundant seafood.
A Few Swordfish Facts
This fish is named for its long, pointed bill, which can measure up to a third of its body length. A swordfish can be up to fifteen feet long and weigh up to three hundred pounds. Swordfish are found in the Pacific, Atlantic, and Indian oceans.
They are also found in the Sea of Marmara, the Mediterranean, the Sea of Azov, and the Black Sea. They can live at depths of up to two and a half thousand feet but they are found in coastal waters too. Swordfish eat garfish, herring, mackerel, squid and other seafood and crustaceans. They use their bill both in defense and to kill their prey.
The following recipe makes good use of this wonderful ingredient. It is combined with citrus, coconut, onion, fresh herbs and more to make an amazing meal. What You Will Need:
6 swordfish steaks, 6 oz each, and 1 inch thick
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
3 oranges
3 minced cloves garlic
1 1/2 cups chopped tomatoes
1/3 cup olive oil
1/4 cup shredded coconut
1/4 teaspoon cayenne pepper
1/4 cup minced red onion
2 teaspoons balsamic vinegar
Juice from 1 lemon, 1 lime and 1 orange
2/3 cup dry white wine
How To Make It:
First, make the citrus salsa. Peel the three oranges and dice them, removing the white pith. Combine them with the red onion, tomatoes, coconut, cilantro, parsley, cayenne pepper, balsamic vinegar, and citrus juices. Toss the salsa mixture well and let it stand for an hour.
Next, make the marinade. Put the oil, wine, and garlic in a pan and bring it to a boil. Take it off the heat. Put the fish in a shallow baking dish and pour the cooled marinade over it. Leave it in the refrigerator for an hour.
Preheat the grill and cook the fish for about four minutes per side or until it is opaque all the way through. Discard the marinade. Serve the fish with the citrus salsa and maybe some boiled rice on the side.
